After 35 years as a Merchant Marine and serving as a Chief Steward, I knew it was time to take a leap of faith and share my passion with the world. That dream became a reality with the launch of our first food truck, Taste of Louisiana.

We bring a true taste of the Big Easy wherever we go—serving up classics like jambalaya, étouffée, po’ boys, and gumbo. Every dish is a labor of love, rooted in tradition and inspired by the rich culture I grew up with.

Through my food, I aim to share the spirit of New Orleans with everyone I meet. The flavors of my city tell a story of resilience, community, and the simple joy of savoring each moment.
